I first encountered Rocky Road Crunch Bars in Starbucks - simply divine with an Americano. Nigella Lawson popped up with a recipe of her own in her boook Nigella Express. As the book's title may suggest, all recipes are easily and quickly made, and the crunch bars are no exception. It is a fridge cake so no baking is required.

Sourcing the mini-marshmallows proved troublesome, but in the end I found them available from large Sainsburys branches. The Rich Tea biscuits can be from the 'Value' range of products and are very cheap.

When melting and folding the ingredients together it is important to remember to save 125ml of the mixture to top off the cake and make smooth. I forgot to do this so nipped out to my corner shop and bought another 100g bar of 70% cocoa solids chocolate, added a nob of butter and tablespoon of syrup. So in reality, I ended up with approximately 130ml of additional crunch bar once I'd finished.

Changes from Published Recipe

The problem with the recipe is it is extraordinarily rich. This is caused by the use of 70% cocoa solids chocolate. I would recommend against this unless you really do want a decadent experience; even then you will probably have to cut up the cake into very small pieces.
