It does seem to be the way that recipe books focus on recipes of four or six portions. That's all well and good but in my case it almost always requires mathematics to permute new measures and weights. For a welcome change here is a midweek dinner recipe built for a single serving. Great for when you're on your own and want to throw something together relatively quickly.

The main problem with this Sweet Jacket Potato with Piri-Piri Prawns recipe for me is the sweet potato. Sweet potato is a foodstuff I can't decide if I like or not. However, I won't allow that prejudice to jaundice my opinion, and I will wholeheartedly recommend it.

Changes from Published Recipe

There were a few (I believe largely cosmetic) changes here due to various cupboard shortages. I didn't possess Light Mayonnaise so had to go for my full fat variety. I do have sweet paprika but mistakenly used the regular! My pointed red pepper was on the large side rather than small, and I used half a packet of 250g king prawns (i.e. 125g instead of 100g).
