Yey! It's Mexican food night! The July 2011 issue of BBC's Good Food devoted a double page spread purporting to what the average Tijuanense may well be quaffing and necking on a typical Saturday night. Naturally the centrepiece of this meal is the ever popular fajitas, and is accompanied with guacamole, sizzling onions and peppers, soured cream and washed down with hearty drafts of Mexican beer cocktails.

The sizzled onions and peppers are simple to prepare and cook. In fact to call this cooking is to aggrandise the process - it's merely chopping up some stuff and bunging it into a frying pan!

The entire evening spawned four recipes. The other three are:
